My kids love this banana coffee cake with chocolate chips warmed up with a little bit of peanut butter and a side of pears yum!!
This kid friendly coffee cake is something all moms can feel good serving – it’s full of really good nutrition, can be done in a food processor and kids are sure to gobble it up. The added lentils and oats provide needed fiber and iron many kids fall short on. And the chocolate helps make it more interesting for little fingers.
Banana Coffee Cake with Chocolate Chips
2 cups cooked green lentils
4 medium ripe bananas, mashed
1/2 cup vegetable oil
2 eggs
1/2 cup granulated sugar
2 tsp vanilla extract
1 1/3 cup old fashioned oats
1 1/3 cup white whole wheat flour
2 tsp baking soda
2 tsp cinnamon
1 cup chocolate chips
Preheat oven to 350 degrees. Spray a 9×13 inch pan with nonstick spray, set aside.
In a medium bowl combine sugar, oats, flour, baking soda and cinnamon, set aside.
In the bowl of a food processor pulse the lentils until pureed. Then add in the bananas and blend until smooth. Scrape down the sides of the processor bowl with a spatula. Pour in the liquid ingredients into the bowl of the food processor and blend until smooth. Again, scrape down the sides of the bowl to ensure everything gets combined. Pour half of the flour mixture into the bowl of the food processor and pulse until just coming together. Scrape down the edges and add in the remaining flour mixture. Pulse until all flour is incorporated.
Pour the batter into the prepared pan and tap the pan on the counter to get any bubbles out. Pour chocolate chips over the top then use your spatula to mix them throughout.
Bake for 35-40 minutes until center is set and a toothpick inserted into the middle comes out clean.
