English Muffin Pizzas (freezer friendly)

English muffin pizzas hold a special place in my heart. I remember making them as a kid and I absolutely love making them with my boys. They were always a summer or vacation thing. You’d be home watching cartoons and then make a batch of English muffin pizzas in the toaster oven, right? It can’t have been just me.

I have to admit, the first time I made English muffin pizzas for my boys they were NOT PLEASED. It completely took me off guard. I mean didn’t they know these were one of the best pieces of childhood?!?! I may have bordered on offended if I’m being honest. But I took the same advice I give my clients: I tried again and I had them help me cook them. Sure enough… it worked! I like to flex the ingredients here and add fun faces or shapes to them for added visual interest and conversation starters.

English Muffin Pizzas

4 English muffins, split 

1/2 cup hummus

2 cups spinach, chopped 

3/4 cup pizza sauce

2 cups shredded pizza cheese 

Optional toppings: mushrooms, peppers, olives, pepperoni

  1. Preheat oven to 375 degrees. Line a cookie sheet with aluminum foil.
  2. Arrange split English muffins on the lined cookie sheet. Spread each half with 1 tablespoon of hummus, top with 1/4 cup chopped spinach and then 1-2 tablespoons pizza sauce and 1/4 cup cheese. Add additional toppings as desired.
  3. Can freeze at this point (wrapped in plastic wrap then in an airtight container) and then defrost before ready to bake. Bake in the oven for about 10 minutes until cheese is melted and browned.
