Butternut Squash and Kale Grain Salad

Ingredients

Scale
  1. 2 pounds butternut squash, peeled and chopped
  2. 3 cups cooked barley
  3. 6 ounces fresh, stemmed kale
  4. 1/3 cup goat cheese crumbles, optional
  5. 5 oz pomegranate seeds or dried cranberries
  6. 2 tablespoons olive oil

Dressing

  1. 1/3 cup apple cider vinegar
  2. ¼ cup olive oil

Instructions

  1. Coat butternut squash in olive oil and season with salt and pepper. Roast in 400 degree oven for 15 minutes.
  2. In a large bowl mix your dressing, seasoning with salt and pepper to taste. On top of the dressing, combine all ingredients mixing well.
