Ingredients
Scale
- 2 pounds butternut squash, peeled and chopped
- 3 cups cooked barley
- 6 ounces fresh, stemmed kale
- 1/3 cup goat cheese crumbles, optional
- 5 oz pomegranate seeds or dried cranberries
- 2 tablespoons olive oil
Dressing
- 1/3 cup apple cider vinegar
- ¼ cup olive oil
Instructions
- Coat butternut squash in olive oil and season with salt and pepper. Roast in 400 degree oven for 15 minutes.
- In a large bowl mix your dressing, seasoning with salt and pepper to taste. On top of the dressing, combine all ingredients mixing well.
