BANANA OAT BARS

Ingredients

Scale
  • 6 small-medium ripe bananas
  • 2 cups rolled oats
  • 1 cup peanut butter
  • 4 Tbsp maple syrup
  • 2 eggs
  • 1 tsp baking soda
  • 2 tsp vanilla
  • 2 tsp cinnamon
  • ½ tsp ground nutmeg
  • ½ cup chocolate chips (optional)
  • ½ cup chopped walnuts (optional) *not suitable for children <2 years old

Instructions

  1. Mash bananas in a bowl.
  2. Add oats, peanut butter, maple syrup and egg and mix well.
  3. Add remaining ingredients and stir until combined.
  4. Pour into a 9×13” baking sheet sprayed with nonstick spray.
  5. Bake at 375 for 30-35 minutes.
  6. Let cool, cut and serve
  7. Store additional portions in an airtight bag in the fridge or freezer.
