Quinoa is a delicious and quick-cooking side option. You can treat it much as you would treat couscous and serve it as a grain. Quinoa is actually the berry of a pseudocereal plant. It is not part of the grass family but is a close relative of beets and spinach. Quinoa is a great option because it is a blend of protein, fat, fiber and carbohydrates- for 1/2c it rings in at 3 Points Plus. Grilled Cod with Roasted Tomatoes and Quinoa
Preheat the oven to 375F. Halve and seed 6 Roma tomatoes, top with 2t olive oil and a sprinkle of salt, pepper and fresh thyme. Roast these for 40 minutes, rotating halfway through cooking time. Meanwhile prepare the marinade: zest and juice of 1 lemon, 2 cloves of garlic minced, salt, pepper and 2t olive oil – stir to combine. Coat 1lb cod in the marinade for no more than 5 minutes. Bring 1 1/4c water to a boil with 1/4t salt, stir in 1c quinoa and reduce heat to medium and cook for 12 minutes partially-covered. Preheat a grill pan to medium-high heat. Grill fish for 5-6 minutes on either side. When the quinoa is done cooking add in 2t chopped nuts and 2t mixed dried fruit, stir and let sit -covered- for 5 minutes. Serving: 1/2c quinoa, 3 tomato halves, 4oz piece of fish. Points Plus: 9
