Sometimes you need to just let things ride, not be scripted. If you have good enough inspiration this can be easy. Easier still if you have a good handle on a few basic cooking skills and access to good ingredients.
While I was digging through my February cooking and baking project lists I came across a recipe for sautéed chicken in lemon and red onion. I decided to use those ingredients as a base and add a few other goodies for a balanced Monday night dinner to start the week on the right foot. This is the sort of cooking I do most nights- some general idea of what I want to do and maybe a reference recipe for ingredient amounts or ratios.
I decided to do spin on chicken and rice. I cut chicken breasts into three pieces (simply so it cooked faster) and seasoned them before searing it on both sides in a super hot pan. Then I removed the chicken and added in quartered lemons, thickly sliced red onions, broccoli and cauliflower florets and minced garlic along with a splash of chicken broth. I stirred it all together, returned the chicken to the pan and covered it before finishing it in the oven at 375 for about 15-20 minutes. We had it with rice pilaf and it was a huge hit- one that will certainly be on our dinner table again in the near future.
